These pots are forged steel (not cast iron) and are excellent for cooking on the stove top or oven.
Seasoning, Use and Care.
Prior to the first use the inside of the pot and lid should be thoroughly washed with soap and hot water. This will remove the protective mineral oil coating on the inside. Immediately dry the insides of the pot and lid and place on the stovetop (at medium heat) or in the oven (300 degrees) to warm the pot and lid just enough to melt Crisco Shortening. Coat the inside with Crisco with a thin coat and allow to cook on for about 15 minutes.
After each use immediately wash with hot water (avoid soap if at all possible), dry immediately and season as described above. Over time the pot will develop a deep rich patina of seasoning on the inside.
Avoid storing food in the pot.
Avoid cooking highly acid foods (such as tomatoes) in the pot for the first couple of uses.
